view into roasting shed

Just in time for Christmas, we have received 2 burlap bags (300 lbs) of a unique Indonesian

micro lot coffee known as “Bali Blue Moon”. [ Shade grown, Organic, hand picked and sun dried ]

This Balinese coffee is produced on farms too small to be offered as a single estate.

It is primarily comprised of S 795 and USDA 762 varieties, which are also grown on Sulawesi and Java. However, just like with wine, coffee picks up influences of it’s growing environment. So Bali coffee is similar to Sulawesi and Java coffee, but different at the same time.

This particular green bean changes quite a bit within the roast profile spectrum. In lighter roasts (just short of the second crack), it has really nice milk chocolate tones and a wine-toned crispness. The finish is very long and pleasing with reminices of chocolate, vanilla and spices. Maybe a little nuttiness, too. As you go darker, the chocolate notes become more bitter-sweet and the crispness is muted. At the same time it’s Indonesian heritage begins to show and the earthiness comes out while the body develops more…

Organic Bali Blue Moon will be featured as our house coffee for the next month and can also be purchased in 12oz bags @ $14 retail.
